Search for natural antioxidant molecules for the conservation of crustaceans

Context

The use of additives for the preservation of certain foods has been widespread for many years. These compounds have long been considered to have no adverse effects on human health. However, their use is the subject of much controversy both for the consumer and the operators who handle them.

Objective

Finding a natural alternative to the use of sulphites, in the processing and conservation of crustaceans and more precisely in the giant tiger shrimp: Penaeus monodon.

About the <strong>project </strong>

The second objective of the project is to develop the marketing of shrimp without chemical additives in conditions of sustainable economy, and therefore, to develop a natural traced food chain.
