Study of the impact of storage temperatures on the quality and safety of aquatic products
Context
Temperatures of preservation of certain aquatic products (0 to +2°C) pose many problems for operators in the aquatic products sector. While they are defined, at the European level, by Regulation EC 853/2004, there are differences of interpretation of this regulation between Member States. In addition, it can sometimes be difficult to maintain the product at the target temperature due to logistics and constraints related to refrigeration equipment. The temperature drifts observed remain of low amplitude but they have a strong financial impact for companies.

About the <strong>project </strong>
The CONPAQTE project aims to take inventory of temperatures in the chain of aquatic products and to assess the impact of a possible modification of the maximum storage temperature of aquatic products on their sanitary and commercial quality by predictive microbiology (prediction of the evolution of microorganisms in food by mathematical models).
