KIPPER
Study on the feasibility and design of a kipper machine
Context
A kipper is a product made from herring, which has been split in half by the back from head to tail, flattened, with guts and gills removed, salted in brine and cold smoked, giving it a brown color.
Objective
Designing an innovative kipper machine.
About the <strong>project </strong>
Nowadays, the gutting and rinsing steps are carried out manually. In order to reduce the risks of musculoskeletal disorders and to allow the workers to devote themselves to more rewarding and less strenuous tasks, but also to meet perfectly the sanitary standards, the project aims to develop a special machine allowing to mechanize the cutting, evisceration and rinsing operation while integrating the recovery of by-products which can be valorized elsewhere.
