Smoking pilot workshop
Context
Smoking is a traditional food preparation practiced for centuries in French Guyana. Currently practiced in an artisanal way, it brings specific qualities and flavors, stemming from the extreme botanical diversity of the area.
Objective
Setting up a modern and mechanized pilot smoking workshop.
About the <strong>project </strong>
Robotising this preparation would allow the smoking-pickling operators to offer new products such as “Caribbean trays” in order to reach a new target (young, festive, in search of exoticism). This project would help to enhance the value of Guyanese fish stocks, which are little exploited and have a high potential. In addition, French Guiana, a pioneer in the ecological management of resource, is building up its future attractiveness on the markets.
