Study on thawing technologies applied to aquatic products and their health, environmental and economic impacts
Context
In order to meet the expectations of consumers who have an overall preference for “fresh”, there has recently been a growing movement to supply the fresh fish shelves with thawed fish.
Indeed, the possibility of supplying the market with defrosted products allows the professionals of the sector to guarantee a price and regularity of volumes to their customers. In this sense, another trend is emerging on the part of shipowners, who are preparing to convert fresh fishing trawlers into freezer vessels.
Objective
To study the health, environmental and economic impacts of thawing.
About the <strong>project </strong>
The DECONGELAQUA project follows on from the study carried out by the GEM consultancy for France AgriMer in 2009 “on the possibilities of using French fishing species that are currently undervalued”. Its objective is to study the health, environmental and economic impacts of thawing. The results of the project allow (among other things) the valorization of certain categories of previously frozen fish in order to be able to market them at more suitable times (lack of resources, holiday period…).
